My name is Madelyne Beckles! I live in Toronto and work as a curatorial assistant for youth and engagement at the AGO. I also have an art practice, co-host a podcast called High T, and am studying to be a holistic nutritionist! Last summer in the height of the first phase of the pandemic, I did some soul searching. I had always fantasized about being in the health and wellness space , and decided to make my yearnings a reality by marrying my love of food and cooking, with my hunger for learning about nutrition and the body.
Tomato season is here! And while they are good exactly as they come, it’s fun to dress them up on occasion. Tomatoes are rich in antioxidants, while coriander promotes cooling in the body. This spicy seasoned oil is the perfect pairing to sweet and juicy tomatoes, but can also be used as a condiment on its own with bread, grilled vegetables, smashed cucumbers or even peaches!
